Why booking isn’t open yet
We’re setting the first dates now. Every class is hands-on, so seats are few: people on the list hear first and get the first seats.

What you make
Everything you bake goes home with you.

Viennoiserie for the Home Baker
Croissants and pain au chocolat from the first fold: butter into dough, then shape and bake.

Professional Viennoiserie II
The next step for bakers who already laminate. Lamination experience required.

Savory Viennoiserie for the Home Baker
Laminated dough with savory fillings, from the fold to the bake.

The Holiday Box
Seasonal pastries to bake, box and give.
A morning at the bench
Three hours at the bench.
- Aprons on, and dough made the day before
- Rolling and folding: how the layers are made
- Shaping, one pastry at a time
- Into the oven
- Tasting what came out of the oven
- Packing up what you made

Private and team classes
Open now. For a team, a family or a birthday: 6 or more guests. At our San Francisco, Marin or South Bay venue. Nobody needs to have baked before.
Give a class
Give a morning at the bench instead of another thing. Gift cards are planned for when booking opens.
Questions
- Why can’t I book yet?
- We’re setting the first dates now. People on the list hear first and get the first seats.
- Can I come to one of the first classes?
- Maybe. Tick “Invite me to one of the first classes” when you leave your email. There are only a few seats, so we can’t promise one.
- Can I book a private class now?
- Yes. Private and team classes for 6 or more are open now. Tell us what you have in mind and we’ll send a written proposal.
- Do I need any experience?
- Each class lists its level. Most are for everyone; team and private classes need none at all.
- What should I bring?
- Nothing. Your confirmation will say what to wear and where to come.
- Can you work around allergies?
- Tell us when you sign up, and we’ll say plainly what the class can and can’t change.
- Can I give a class as a gift?
- Gift cards are planned for when booking opens. Join the list to hear first.
